I don’t know if it’s just because this year has been a wild one, but I am really enjoying fall this year. The change in seasons, the beautiful fall colors, and the coziness of curling up at home have been super soothing and sweet, right? So I'm getting all the fall feels of comfort baking.
Knowing myself, I know I could easily fall into old habits of baking the kind of cookies that I'm used to making with flour, butter, and sugar but I want to turn over a new leaf and show you that if I can do it so can you. We are not who we think we are, we can choose our destiny, design our lives, and get to believe the stories about ourselves that we want to believe i.e empowering beliefs vs. limiting ones.
To make the cookies healthier I add protein powder which not only adds protein, but 24 essential daily vitamins, minerals, and complete amino acids. My go-to protein is Arbonne's FeelFit plant-based Vanilla Protein. In this recipe, I've used the limited edition Simply 1 protein which is a keto-friendly version that is lower in sugar and carbs than the regular version.
I switched from conventional whey protein over to this pea-based plant protein because it's made with cleaner ingredients and is easier on digestion.

Sunshine Breakfast Cookie Recipe
1 Cup Gluten-free rolled-oats
1/2 Cup Arbonne Simply 1 Protein
1/4 Cup Raw Honey
1/4 Cup Natural Peanut Butter
1/4 Cup chopped pecans, cashews, walnuts
1/4 Cup pumpkin seeds
1/4 tbsp Flaxseed meal
1 tsp Vanilla
Dash of Cinnamon
1/3 Cup Dark chocolate
Preheat oven to 350.
In a large bowl combine dry ingredients then add wet ingredients and mix until combined. Then fold in the dark chocolate.
Take a cookie scoop and scoop up dough and place evenly onto a cookie sheet. The cookies don't spread so you can fit lots on a sheet but don't try to squeeze on too many.
Bake for about 8 minutes.
Remove from oven and place on an oven rack to cool.
Pro tip: to keep this recipe gluten-free, make sure you choose gluten-free oats. It’s weird, I know, because oats really shouldn’t have gluten — but sometimes they do. So when you’re doing your shopping, make sure you double-check the label on oats before you add them to your cart. Also, unfortunately, a lot of commercial oats are over-processed so quick-cooking oats should be avoided at all costs. Opt for a slow cooking oat that take at least 10 minutes to cook.
